  1. Sous vide is a great way to doll up cheaper cuts of meat into half decent steak meat. Works well for chuck.

  2. Plastic (e.g., polyethylene bags): Starts degrading around 212°F (boiling point). Hence why they are single use bags.

  7. Anything steak cooked on a grill is better than one finished with a pan sear. End of discussion and I’ll go from start to finish in 7 minutes

  8. Sous vide is just a convenient way to get a great steak, it’s definitely not better than just cooking one on a cast iron perfectly, but that can be hard to get right
