Sous vide is a great way to doll up cheaper cuts of meat into half decent steak meat. Works well for chuck.
Plastic (e.g., polyethylene bags): Starts degrading around 212°F (boiling point). Hence why they are single use bags.
It's best to hit it with a torch sear. Or some type of open flame, obviously caveman and what not…
