Just a clarification on NC BBQ. Eastern is whole hog and western is mostly just pork shoulders. And it has to be pit cooked over hot coal. Mike, if you want the best in the state check out Grady's BBQ in Dudley just south of Goldsboro. Closer to Raleigh is Stevenson's BBQ on NC 50 a couple of miles north of McGee's Crossroads. These places are on par with the Starlight Inn in Ayden. And all have been around for decades.
