  1. For the love of all things good, it does not matter AT ALL if the meat is submerged in icy water. Anyone who says the meat will get "waterlogged" is making up a story.

  2. Deer processor here, in order or operations this is how you want your meat:

    1. Like this video. Fully covered in ice or even frozen if possible for best results.
    2. Half and half ice and water. Cold water will yes, keep it cold, but its not ideal to keep it soaked in water.
    3. Ice blocks (like frozen jugs and such). I get the want to do this because youll get no water leakage, but because theyre so large theyre usually only good cooling one side of meat. Not the best.
    4. Just water. Water is not an ideal solution to keep anything cold. From experience a lot of people driving long distances that dont replace their ice usually show up with decently cold meat at best, warm water meat at worst.
    4. Nothing. I feel like i gotta say it because ive seen it more than once. Putting meat in a cooler with nothing in it usually gives it a 95% of spoiling, dependant on weather conditions and type of cooler. Im in Texas so it only got cold in January this year, so anything from Oct-Dec dropped off like this usually got tossed.

    Dont be stingy. Spend 10 bucks on ice and get good meat back.

    Side note: If you bone out every scrap of meat into little pieces and pour ice like this in it, your meat is A1 but i promise you your processor hates your guts. Thats the worst to get out

  3. I always just butcher everything up and vacuum seal it before tossing it in the deep freeze. Maybe I'll do an experiment with the next deer I get and see if aging makes any difference.

  4. I generally leave to bottom layer in the bag as it retains cold better . I open the drain valve and allow drainage . I cover completely in eyes and refills
    I do weeks minimum and sometimes 3-4
