  1. Gotta salt those steaks, put on a wire rack above a pan in the fridge for 24-48 hours and let that pan get super hot! Beef tallow or Avacado oil. For a steak that thick for medium rare: 3min to 4min for the first side, 2-2.5min for the second side. Super dark brown even crust on both sides.
