  2. Try taking your hind quarter and smoking it for 4 hours at the same time I was smoking g a pork butt. Let the butt and the fat cap off the butt drip on the venison then after 4 hours wrap the venison and the butt cap in double foil and leave it for another 4 hours. The bone will fall right out and you will have the best tasting and most tender, moist venison you ever tasted.

  3. I've been told that lower section of leg is what can effect the flavor of your ground venison. I've never ground venison but I've had terrible deer burgers and really good deer burgers.

  5. A whitetail deer has two tarsal glands that are located inside the deer's hind legs. You can find the tarsal glands where the deer's back legs bend. The large tufted of lightly-colored hair sticks out and is strategically placed for the deer to create a unique scent specific to that deer.

  6. I was shown this as a young man by an Indian hunter on a hunting trip. The man dressed the deer in camp and showed all of us everything he knew.
    I might recall one or two more things.

  7. Fun Fact: the 'white almost web-like connective tissue' 3:46 between muscles is called fascia, it helps provide structure and support to the muscles throughout the body.
